Some will say whether it’s chicken or turkey – it doesn’t matter. However, the truth is in the meat itself. Today it is difficult to get quality chicken, but turkey meat is not so popular in Bulgaria, and it seems that the abuse of this type of bird is not at such a “height”.
The turkey, as a symbol of abundance and opulence in some countries, provides an extraordinary opportunity for culinary creativity. With a distinct flavor and delicious meat, turkey with added oranges adds a new, refreshing element to the traditional preparation of pheasant meat dishes.
Recipe for stuffed turkey with oranges
The oranges, with their sweet and slightly sour taste, combine perfectly with the stuffing and meat of the turkey, creating a different but pleasant taste delight. The turkey, in turn, will become juicy, tender and with aromatic flavor notes – a dish that perfectly suits the Christmas holidays.
Ingredients for turkey with oranges
- 1 turkey (approximately 3-4 kg);
- 4 oranges (grated peels, squeezed juice and slices);
- 1 tsp Red wine;
- 100 ml of olive oil (or oil as a last resort);
- 50 ml of pomegranate juice and half a pomegranate for garnish;
- thyme (optional);
- rosemary for garnish;
- pepper and salt to taste.
How to make stuffed turkey with oranges
Remove excess fat from turkey, rinse and dry well.
In a large bowl, combine the orange juice and grated orange peel from 2 oranges, the red wine and olive oil. Add the pomegranate juice, season with salt and pepper and add the grated thyme.
With 3/4 of the marinade prepared in this way, coat the whole turkey liberally inside and out. Cut the remaining two oranges into quarters and stuff into the turkey. Sew well with thread or pinch.
Bake in the preheated oven at 180g until done, basting occasionally with the remaining 1/4 of the turkey rub mixture.
Once it is ready, you can serve it in a suitable serving coat and garnish with rosemary.
