Marinated bonito – a wonderful winter dish that we can prepare when the fresh bonito comes out. From the beginning of September to the end of November, you can find good-sized and fresh bonito specimens in the markets.

Maybe your marinated bonito will become even tastier, but for this you need to choose quality products, starting with the fish. We assure you that when you taste the end result, you will lick your fingers. You can also prepare this recipe with other fish, for example mackerel.

You clean the fish from the insides, heads and fins. You wash it and dry it well. You cut it into slices about 3-4 cm thick. At the bottom of a pot, you put vine branches, like a grid, and arrange the pre-salted fish on it. Pour the abalone with the oil and vinegar, add the bay leaves, allspice and black pepper. Boil on low heat for about 3 hours.

You put a row of fish in suitable jars, and on top of it you add tomato puree, beans, peas, pickles, fish again and so on until you fill the jars. Top with the sauce in which the bonito is cooked. You seal the filled jars and sterilize them for 10-15 minutes.
